Sausage and Sweet Potato Scramble recipe


  • 5 Smokehouse Polish sausages
  • 8 eggs
  • ⅓ cup milk
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon butter
  • 2 medium sweet potatoes, diced into cubes
  • 2 green onions, diced 2 cups fresh baby spinach


  1. In a bowl whisk together eggs, milk, salt, pepper and set aside.
  2. In a large skillet melt butter- add onion, sausage and sweet potato.
  3. Cook, stirring occasionally, until potatoes are just tender, about 6-8 minutes.
  4. Add spinach and cook 1 minute.
  5. Pour eggs over potato mixture, cover and cook without stirring. Reduce heat to low.
  6. Cook until eggs firm around sides of skillet. Gently stir/fold mixture a few times.
  7. Continue cooking for 2-3 minutes or until egg mixture is cooked to liking.
  8. Optional: top with fresh parsley and serve with hot sauce.
