- 5 Smokehouse Polish sausages
- 8 eggs
- ⅓ cup milk
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon butter
- 2 medium sweet potatoes, diced into cubes
- 2 green onions, diced 2 cups fresh baby spinach
- In a bowl whisk together eggs, milk, salt, pepper and set aside.
- In a large skillet melt butter- add onion, sausage and sweet potato.
- Cook, stirring occasionally, until potatoes are just tender, about 6-8 minutes.
- Add spinach and cook 1 minute.
- Pour eggs over potato mixture, cover and cook without stirring. Reduce heat to low.
- Cook until eggs firm around sides of skillet. Gently stir/fold mixture a few times.
- Continue cooking for 2-3 minutes or until egg mixture is cooked to liking.
- Optional: top with fresh parsley and serve with hot sauce.
